1. Firstly clean and wash the chicken pieces then in a pan add water, little salt, crushed ginger and garlic, slitted green chilli and the chicken pieces. Boil it for 5 to 6 mins.
2. Meanwhile take a round cookie cutter and cut some coins from the sandwich bread. I cut two coins from a slice of bread but you can adjust it according to the size of the bread slice and cookie cutter that you have.
3. Now shred the chicken pieces. Take a mixing bowl add the chopped onion, capsicum, carrot, the shredded chicken, black pepper powder, mayonnaise and salt as per your taste. Mix it well.
4. Take one coin of bread, spread the mixture properly and then place another coin of bread. Repeat the same process with the other coins.
5. You can garnish this sandwiches with some toothpick and cucumber slices but it's optional.
