Instructions to make Ottu Shyavige Upma With Ragi Coffee:
Soak rice in enough water for 4 hours and wash nicely.
Grind smoothly soaked rice with sufficient water and salt to taste.
The consistency of batter should be thin like buttermilk.
Take a heavy bottomed kadhai apply coconut oil, pour batter, add sufficient water.
Saute continuously till the mixture forms single dumpling.
This will take 15 minutes in low-medium flame.
Allow it to cool a little and make cylindrical shaped dumplings.
Place these on idli steamer and steam in medium flame for 20-25 minutes.
Check the cookness, otherwise shyavige will be sticky.
Now place in hot only in shyavige presser or chakli maker and press in to thin noodles.
Heat a pan with coconut oil of 4 tsp.
Add mustard seeds, red chilli, groundnut, urad dal and let it be splutter.
Add curry leaves and chopped onion fry till translucent.
Add salt to taste, turmeric powder a pinch, crushed shyavige.
Fry for 2 minutes, garnish with coconut gratings and coriander leaves.
Serve with ragi coffee.
For ragi coffee..
Heat water, add ragi flour, Coffee powder and Jaggery, mix well and bring it to boil finely.
Add milk and serve.
