Steps to make Lentil Loaf:
Preheat oven to 350°¢ and line a baking tray with parchment paper.
In a large pan saute onion, carrots, celery,, mushrooms, bell paper with a pinch of salt and pepper until softened on medium heat.
Add the garlic and saute another minute.
In a food processor pluse together the lentils, cooked vegetables, tomato paste, bbq sauce, flax meal, parsley, salt, pepper, oats and breadcrumbs.
Do not puree but blend into a chunky dough.
Place mixture on the prepared baking sheet and spread into a loaf shape.
Bake for 35 minutes. Remove from the oven and spread the ketchup on top or a garnish with your choice.
