The ingredients needed to make Vegetable Soup:
  1. Make ready 4 small red onions,or 6 in a Pack
  2. Take 4 medium carrots,chopped
  3. Prepare 4 Parsnips,chopped
  4. Prepare 4 Maris Piper Potatoes,chopped
  5. Take 4 Leeks,chopped
  6. Take 2 red Chillies (optional)
  7. Get 1.400 ml to 2.000ml Vegetable Stock
  8. Take 4 tbsp. Olive Oil
  9. Get About 1 tbsp. Sea Salt
  10. Take About 1 tbsp. Black Peppercorns
Steps to make Vegetable Soup:
  1. Heat the olive oil in a large saucepan.
  2. Add the vegetables (onion,carrots,parsnip,leek,potato) and cook for about 5 minutes.
  3. Add the Vegetable Stock water and bring to the boil.Cover and cook for a further 20 minutes.
  4. Allow to cool to room temperature.
  5. Pour contents of saucepan into your blender and blend for about 30 seconds until completely smooth.Add more stock or hot water if required.
  6. Pour contents back in to the saucepan and add the chilli.Alter the consistency with a little stock or hot water if desired.Season with salt and pepper if required.
  7. Simmer for 10 minutes and serve.
