Get 100 g Garam flour

Get 1 handful Mchicha leaves (Aramanth Leaves) shredded well

Take 50 mls water
Get Cooking oil
Take 1 pinch Yellow colour,
Make ready 5 large onions diced well
Make ready Pepper to taste (optional)

In a bowl, mix well the two flours plus food colour and the baking powder. Add in the amaranth, pepper and the onions, mix them till they incorporate very well with the flour. Add water little by little till you get a very thick but soft dough.
Heat your oil in your deep frying pan. The oil should not over heat but be a moderate heat. Test if the oil is ready using the back of the wooden cooking stick and if bubbles form around it, then the oil is ready.
You can use the spoon to drop them in the hot oil or you can oil your hands and start making small round balls and dropping them in oil…..put as many as you can. Keep turning them so that they cook well on both sides for around 6minutes.
Keep turning them till you get the desired dark brown colour and then remove from the heat, putting them in a metal strainer or a bowl to drip excess oil or in a bowl with paper to soak the excess oil (see the photo though not so clear). Do this till you're done.
Serve with Tamarind / Ukwaju sauce or Tomato Sauce or Chili Sauce. Enjoy!
