Instructions to make Layered Beef & Zucchini:
  1. Heat oven to 350°F.
  2. Grease 8x8x2 baking dish.
  3. Brown & drain ground beef.
  4. Place zucchini slices in single layer on bottom of dish. Sprinkle with 1/4 cup gluten-free buscuit mix. Top with beef & spaghetti sauce.
  5. Mix cottage cheese & egg. Then add 1/2 cup gluten-free biscuit mix until soft dough forms. Spread over sauce. Sprinkle with Parmesan cheese.
  6. Bake uncovered until hot & bubbly, about 30-32 minutes. Let stand 10 minutes before serving.
