Make ready 1 lb Boneless Skinless Chicken breast
Make ready 1 cup jasmine rice
Get 1/2 medium Red pepper
Prepare 1/2 medium Yellow pepper
Take 1/2 medium Orange pepper
Make ready 1 1/2 cup Cherry tomatos
Get 1/2 cup Brown sugar
Take 1/3 cup yellow mustard
Make ready 3 tbsp Cajun seasoning
Get 1 tbsp Cumin seeds
Instructions to make Bajun Chicken:
Boil 1 1/2 cup water, add 2 tblspoon olive oil, 1 teaspoon salt, then add rice, reduce heat simmer 20 min.
Cube tomato's, peppers and chicken. Slice cherry tomatos in half.
Add cumine seeds to pan, high heat wait untill they roast, shake occasionally.
Throw chicken and cajun seasoning in ziplock bag and shake.
Add chicken to pan with cumin seeds, brown chicken 1-2 minutes. This is all done dry with no oil.
Reduce heat to half, add brown sugar. If brown sugar starts to burn remove pan from heat. It should melt easily.
Add yellow mustard. Stir so evenly coated.
Add tomatos and peppers. let simmer 5 min untill chicken is cooked through.
Serve ontop of rice.
