The ingredients needed to make Indoor poha:
  1. Prepare 2 cups chivda (thick variety)
  2. Make ready 1 medium Potato (diced)
  3. Take 1 large Onion (finely chopped)
  4. Prepare 8-9 Curry leaves
  5. Make ready 1 tsp Fennel seeds
  6. Prepare 1/2 tsp Mustard seed (black)
  7. Get 1/2 cup Peanuts (roasted without skin)
  8. Take 3 tbsp coconut grated
  9. Get to taste Salt and sugar
  10. Take 1/4 tsp Turmeric powder
  11. Prepare 2 tbsp Cilantro leaves
  12. Make ready 2 TBS lemon juice
  13. Prepare 1 TBS Green chillies (finely chopped)
  14. Get 1 tbsp oil
  15. Make ready 1 tbsp sugar
Steps to make Indoor poha:
  1. Soak the poha in water for 5 minutes. Drain the excess water and keep it aside. In a pan heat the oil, temper it with mustard seeds, fennel seeds and curry leaves.
  2. Once the onions become translucent, add the diced potatoes and fry for few more minutes. Add the chopped green chillies, peanuts, and saute them for a couple of minutes.
  3. Now add salt and turmeric powder, cover and let the potatoes cooked in it's own steam. Once the potatoes are cooked, add the soaked poha, stir it for few minutes. Check the seasonings, adjust the salt and sugar to taste.
  4. Switch off the heat, cover the pan and let it stand for 5 - 8 minutes. - Poha should be ready by that time. It should be fluffy and able to retain it's shape. Now garnish it with a handful of grated coconut, remaining chopped onions and cilantro leaves.
