Steps to make Beef Chemsha with Mashed Butternut and Potatoes:
Place the beef in a cooking pot add water and let it boil; (for best results, do not use pre boiled beef) water should be enough and should not be added again at any point; in the meantime, place your peeled butternut and potatoes into a different cooking pot, add salt and a pinch of black pepper and boil.
Add the diced onions once the water is boiled and reduce the heat to medium; allow this to boil for 8-10 minutes
Add all other ingredients to the cooking pot; at this stage add the two table spoons of soy sauce, pinch of salt and table spoon of royco; the only items not being added at this stage is coriander and green pepper; allow to boil for about 30 minutes; in the meantime, remove your butternut mixture, pour out excess water and mush.
Taste your stew and monitor the viscosity, if you prefer a thick stew, potatoes could be added in step 3 above, and mushed or more tomatoes could be added in step three above. This depends on your preffered taste. Once you are satisfied with the taste of the stew, turn off the heat and add coriander and green pepper, let it simmer for 5 minutes before serving.
Place the mushed butternut and potatoes into a small bowl, pour it into a larger plate or larger bowl and serve with the beef chemsha😋😋
