Steps to make Stuffed Butternut Squash:
Preheat the oven at 380F. In the mean time prepare the butternut squash but cutting into halves and season it with olive oil and salt.
Now roast the butternut squash in the oven for 40 minutes until tender (It might take more or less depends on the oven)
While the butternut squash is roasting prepare the stuffing.In a pan add olive oil, and garlic, Stir 1 min until fragrant
Add quinoa, chickpea, cumin powder and paprika. Stir for another 2/3 mintues
Now add orange zest and spinach and cook for another 2 mintues
Your stuffing is now ready
Take out the squash after roasting and add the stuffing
Add micro Greens and Pomegranate on top and drizzle some olive oil
