  1. Wash the 2 brinjals. Give cuts. Apply 1 tbsp oil on both the brinjals. - - Roast the brinjals with garlic inside the cuts on brinjals, on gas flame till soft so that the skin will come out easily. Chop the roasted garlic cloves.
  2. Peel off the skin and if possible avoid washing to retain the original aroma if you like. - - Mash the brinjals to paste.
  3. Now heat oil in a pan. Saute onion and carrots till translucent. Add garlic ginger, green chilli and saute till release aroma. - - Add tomatoes, roasted peanuts and cook till tomatoes are soft. Add turmeric powder, red chilli powder, salt and mix well.
  4. Add chopped coriander, mix and cook on slow flame for 5-7mins. - - Serve hot with Roti and/ Rice. - Thanks
