Prepare 650 gms Chicken
Take 1 tablespoon black pepper
Get 1 teaspoon Turmeric powder
Make ready 2 teaspoon Kashmiri red chilli powder
Make ready 2 tablespoon salt
Take 4 tablespoon curd
Take 1 tablespoon lime juice
Take 8 tablespoon refined oil
Get 1-1/2 tablespoon ginger garlic paste
Make ready 8 onions (half chopped and half diced into large pieces)
Take 1 medium sized tomato chopped
Prepare 1/2 bowl chopped coriander leaves
Take 1 tablespoon coriander powder
Make ready 1 tablespoon cumin powder
Take 1 teaspoon garam masala powder
Make ready 1 tablespoon sugar
Get 3-4 green chillies chopped diagonally
Get 1 bay leaf
Make ready 1 dry red chilli
Steps to make Chicken Do Pyaza:
Marinate the chicken with 1 tbsp kashmiri red chilli powder, 1 tbsp salt, 1 tbsp black pepper powder, 1 tbsp turmeric powder, 1 tbsp lime juice, 4 tbsp curd and 2 tbsp oil (refined oil).
In a kadai pour in 6 tbsp oil and allow it to heat up. After the the oil has become smoking hot add in 1 bay leaf and 1 dry red chilli.
Add the chopped onions and a pinch of salt so that the onions get fried fast. When the onions have softened and have become translucent add in 1 and a half tbsp ginger garlic paste and stir it nicely in medium flame till the raw smell of the ginger garlic paste has vanished.
When the onions and the ginger garlic paste have got fried properly, then add the marinated chicken. Mix the chicken pieces nicely with the onions. Cover and cook for sometime. Keep the flame in medium. When the chicken starts releasing water add in 1 chopped tomato and stir. Cover and cook.
After sometime when the tomatoes has become soft add in 1 tbsp coriander and 1 tbsp Kashmiri red chilli powder. Mix the chicken with the spices nicely and cover and cook. When the water has dried a bit that time add in 1 tbsp cumin powder and 1 teaspoon garam masala powder and give it a good mix. Cover and cook for sometime.
No need to add water. The chicken gets cooked in it's own water. If you want you can add half cup water at this point. Add in 1 tbsp sugar and salt to taste, stir and cover.
When the chicken has started releasing oil, water has dried up (you can keep a bit of liquid or you can make it dry) and the chicken has become soft add in the 4 diced onion, stir it, cover and cook. Do not let the onions become soft. It should retain it's crunchiness. Cook for two minutes and then add chopped coriander leaves and diagonally chopped green chillies stir and cover and cook for 20 seconds.
The chicken is now ready to be put off the pan. Garnish it with chopped coriander leaves and diagonally slit green chillies.
